Eastern countries have specialized in processing the wheat and creating several dishes based on it’s main nutritional element. In addition, wheat has been an important food source known to humans through history, even since the Stone Age. At one point, Wheat was considered a spiritual symbol for blessing, and was used for worshiping.

One of the main by-products of Wheat is Burgul. Burgul, is a common source of food in the Middle East, due to its high nutritional  value and health benefits . Burgul replaces imported rice because wheat is a planted crop in the region, and a better source of diet. Burgul is used in various plates since it can be easily mixed with vegetables and meats.

The amount of Protean in Burgul on average is 15%. The Protean percent varies depending on the Wheat type used. Only hard types of Wheat are used as a source for producing Burgul, since the processing of a soft wheat grain will cause a major loss in Protean percentage.
Burgul also contains 60% Carbohydrates, 5% organic salts, 3% of oils, Vitamins like B1, B2, B6, PP and E. In addition, Burgul
contains a high percentage of minerals, like Phosphor, Iron, Calcium, Silicon, Yuden, Potassium, Sodium and Magnesium.

In conclusion, the high percentage of Protean content and other nutritional benefits makes Burgul a good substitute for animal food source, without the Fat.
